The biscuit of the “Fiera di San Lazzaro” (San Lazzaro Fair) owes its birth to the recovery of an old recipe used on the occasion of this 180-year old event celebrated by a Bolognese traditional song, made famous in a version by Francesco Guccini.
According to tradition, farmers and cattle dealers were offered the biscuit while sitting at the negotiating table. It seemed that this biscuit brought luck, even though it hasn't been proved yet: its wholesomeness is, on the contrary, a sure thing.
A famous local biscuit factory has recently supplemented the original recipe with a chocolate version of the same biscuit.
The savoury biscuit can be tasted on the occasion of the Fiera di San Lazzaro (San Lazzaro Fair), which takes place in the town of San Lazzaro every year between the end of July and the beginning of August. Many people also arrive from outside region purposely to taste the savoury biscuit.
