It seems unbelievable that nowadays we can create a new pasta format, yet a citizen from Ozzano (Flavia Valentini) has succeeded in the feat!
Among all the types of fresh pasta now we have to consider also the imbutini, officially recognized as De.Co. but also by the Uami (European agency for the registration of trademarks, designs and models): in fact, they have a specific diameter and thickness (3.7 cm and 2 mm) and do not lose their shape during cooking.
Small and versatile, the imbutini are perfect for scooping up and enjoying any kind of sauce; they can meet both tradition and innovation. The pasta itself can be flavored in various ways: classic imbutini are yellow, but they are also produced green (the pasta is colored with spinach), pink (with beet) and even flavored with cocoa.
Imbutini have become part of the typical dishes of Ozzano nell'Emilia, so much so that they even boast a dedicated festival!
